At St. Joe’s we believe in sourcing the best ingredients for our products in order to both steward the earth well, and create the best tastings, most nutritious food possible. The light sifting removes some of the bran to make it smoother, but retains most as well as the germ. We always use organic flour in our pastries and breads, which is processed at cool temperatures to preserve the nutrients in the wheat.
